Generality of the Lemon Thyme Plant:
The lemon thyme plant is easy to grow and finds its ideal environment in the gardens, it is very robust and survives for some time without water. With its intense citrus flavor, lemon thyme is used extensively in the kitchen, both in Europe and in the eastern countries. Among the various uses is found: in cooking grilled and boiled meat, grilled and baked fish, to flavor salads, in the condiments of pasta and rice dishes. Great for making grilled or steamed vegetables, for baked potatoes, and sautéed mushrooms.

Generality of the Lemon Thyme Plant:
Lemon thyme is a variety of thyme with a strong lemon flavor. The plant is rustic and easy to grow following some advice. The lemon thyme is not a recipe for cooking but a real plant with a shrub bearing and which has particular yellow and green hues on the leaves. Its smell of lemon thyme is given by the essential oils contained in tiny sachets mainly located on the upper page of the leaves. Its particular taste is just a cross between the classic thyme and the citrus lemon fragrance that goes well with many dishes based on meat and fish. The lemon thyme is added to mixed vegetable salads in particular with sprouts, tomatoes, yellow peppers and aubergines also in oil or vinegar. Excellent over grilled vegetables, sautéed mushrooms and baked potatoes, it is added in pasta sauces, on pizza and in many sauces and accompanying creams in various seconds. It can also be used in desserts, especially those preserved in spirit like fruit, which gives it a really appreciated aroma, or in sorbets or ice cream to enhance flavors and to give a special touch to the taste. It is also prepared as a curative herbal tea or aromatic drink for both hot and cold drinking. The preparation is for in infusion with other herbs or even alone.
Cultivation and Care of the Lemon Thyme Plant:
The lemon thyme does not have great demands for particular soil: it is sufficient that it is dry and well drained because it suffers from the stagnant water. Being an aromatic plant, it loves a good exposure to the sun even if it can withstand the half-shade. It tolerates the wind well as it grows in an almost creeping position and is therefore unlikely to be disturbed by drafts. Irrigation should not be abundant and the soil should be dry before irrigating again.
